Chocolate Pistachio Bundt Cake - Happy 42nd Birthday David

We celebrated David's 42nd birthday over the weekend.  We are now officially the same age again 😊.  I made him a chocolate pistachio Bundt cake with a chocolate glaze (it's a recipe from The Cake Doctor).  We hadn't made this one before and it turned out to be delicious - even the kids who were skeptical ate it!  Check out pictures of how I made it below.  I think David had a nice birthday and he even received a few The Hitchhiker's Guide to the Galaxy gifts!

It's super important to spray (and dust your pan with flour) to prevent sticking.  Bundt cakes especially need to come out of the pan nice and clean.  After spraying this recipe calls for the chocolate chips and pecans to be placed in the bottom of the pan.  So when the cake is finished they will be on the top.

After mixing the cake batter, 1 cup is removed.  The rest is added on top of the pecans and chocolate chips.  The pistachio flavor comes from the addition of a pistachio flavored pudding package.

The cup of reserved cake batter is mixed with chocolate syrup to create a chocolate batter.  This is added to the cake in the middle of the pan.  Using a knife you gently swirl the two batters together to create a marble effect.

 After baking, the cake needs to cool before removing it from the Bundt pan.

Unfortunately, my chocolate glaze icing started to set before I was able to place it on the cake so it wasn't as "pretty" as I had hoped.  It was delicious though and that matters more!
